Fast Food and Calories

Here in the age of technology and information, we have more knowledge and advancements than ever before in history. Sixty years ago, who would have thought that you could send an instant message over a phone, let alone take a picture with it? Sixty years ago, who would have thought that we would be able to send a man to the moon, but fail in the war against obesity and cancer?

Isn’t it strangely shocking that the United States is so advanced in everything except health and fitness? While the fitness industry tells us we count calories and exercise to lose fat, we are getting fatter as a nation.

Parallel to the fitness industry are the fast food chains, which are doing their best to stay on top of the “healthy eating” trend. It appears that the fast food industry can accommodate anyone’s dietary needs with “fat-free,” “low-calorie,” and “low-carb” menu items.

Today, fast food is considered a normal gastronomic activity among the average person. People no longer just go out to eat on special occasions or weekends; they are eating out all the time. But is it the calories in fast food that are so destructive to the body and waistline, or is the problem deeper?

Fast food and obesity

Fast food is simply tasty food, prepared and packaged to go. Fast food has been around since the early 1900s, but its popularity soared and grew in the 1940s with the birth of good Mickey D’s; fast food at an economical price. Within a few years, similar fast food operations appeared everywhere in the blink of an eye.

With the compelling rise of fast food restaurants since the 1940s, also, interestingly, the rise in obesity and cancer began during that same time period. It doesn’t take a rocket scientist to do the math and link fast food to obesity and the cancer crisis.

Fast food and its nutritional value

To say that fast food has “nutritional value” is an oxymoron. There is absolutely nothing nutritional in fast food. Fast food simply feeds your hunger and / or your immediate craving. Fast food does not fuel your body in the form of durable usable energy or building materials, the essence on which your body thrives for life.

Fast food is highly processed with a wide range of additives. The concept of fast food is obviously ready-to-eat and quickly served food. To ensure the low cost of fast food for the consumer, fast food products are made with highly processed ingredients to give shelf life, maintain consistency, and enhance flavor. Fast food is altered from its original healthy form that was intended to nourish the body, to a denatured form that lacks any nutritional value.

According to Diana Schwarzbein, MD, “The FDA Total Diet Study found that fast food hamburgers, overall, contained 113 different pesticide residues.” So my question is why does the FDA want to regulate the sale of vitamins, minerals and herbs that are really beneficial to the body when there is a crisis that links fast food, cancer and obesity on our hands?

Why fast food is fattening and dangerous

Wake up people. It’s not the calories in fast food that harm your health and your waistline, it’s the chemical additives like aspartame and MSG (monosodium glutamate). These chemical additives are FDA approved and studies show that they cause weight problems and illness.

Synthetic chemicals added to processed foods, including fast food, damage cells in the body. Your body is made up of nutrients that are found in the plants and animals that you eat. Artificial foods laden with pesticides, as well as aspartame, margarine, and other artificial chemicals do not nourish your body. If your body cannot use what you put on it, it will increase fat and decrease health.

Since we can’t visually see what’s really going on at the molecular level when we eat processed foods, we discard them and trust the FDA to think for us. After all, if the FDA approves it, it MUST be okay to eat, right? Not at all.

The nutrients in the food we eat allow us to burn fat and be healthy. Your body cannot process synthetic chemicals. If a food cannot be processed, it will end up lodged in areas of your body, mainly fatty areas and tissues, creating an acidic pH.

A simple fast food chicken breast can contain everything from modified cornstarch to hydrolyzed corn gluten. Hello? Chicken composed of corn? A fast food chicken nugget contains almost 60% corn, and corn is what farmers use to fatten cattle.

Michael Pollan, author of The Omnivore’s Dilemma puts it perfectly: “How do we get to a point where we need an investigative journalist to tell us where our food comes from?”

A good picture that Dr. Mark A. Gustafson found is that it takes fifty-one days to digest fast food chicken nuggets or French fries. FIFTY ONE DAYS! Sound healthy? I could care less about the calorie, fat or carbohydrate content. That’s not the problem, people. The problem with fast food is that it lacks nutrients and is loaded with chemicals not recognized by the body.

What is even more devastating is the book The Fast Food Diet written by Stephan Sinatra, MD. This is a sad state when a doctor promotes the consumption of chemically altered foods with addictive chemicals and damaged fats that scar the walls of the arteries and contribute to total metabolic damage.

Eat right and avoid hidden dangers

Of course, calories count up to a point, but what counts the most is the quality of the calorie. If you want to lose fat, you must change your eating habits. This does not mean opting for Healthy Choice® and Smart One’s® frozen meals because they appear to be healthy. Food manufacturers use deceptive marking tactics to create the illusion of getting people to buy their product.

To lose fat and keep it off, you should choose foods in their natural state, such as fresh organic cuts of meat, fresh organic fruits and vegetables, essential fats, and plenty of filtered water. It is vital that you go back to basics.

Make fresh and organic food options the bulk of your diet. If you do, you will never have to count calories again. The quality of the food always outweighs the quantity.

When you order an information packet from a private high school, you will find that essays and short answer essays are necessary for both you and your teen. Your teen, who should be comfortable answering essay-style questions, will be asked about his academic strengths and weaknesses, his desire to attend private school, and his hobbies and extracurricular activities. 2013 Fantasy Football Sleepers

The key to winning a fantasy football league is the ability to recruit Sleepers. Sleepers are rookies or NFL players who haven’t had much of an impact on their NFL careers. In the fantasy football world, this is the way to win your league championship. Last year, Alfred Morris, as a rookie, was expected to be part of an RB committee, at best, and took control of RB’s No. 1 position and delivered over 1600 yards and 13 TDs. In his sophomore year, Stevan Ridley impressed Bill Belichick enough to take on running back duties full-time and proved he was right by rushing for 1263 yards and 12 TDs. No one expected any of those performances and the owner had to ruin the rest of his team to miss the league playoffs. When you can take a player as a midfielder or a bench player and he becomes your # 1 producer at that position, you, my friends, have a true Sleeper. Below are the best fantasy football sleepers by position for the 2013 season.

2013 Fantasy Football Sleepers

QB: Carson Palmer (AZ) – Palmer leaves Oakland and lands on the same vertical pass attack he led at Oakland. He put up some really good fantasy football numbers in Oakland and they had limited talent, at best. In Arizona, it has an arsenal of weapons. The great weapon is Larry Fitzgerald. This combination, if I can risk it, will rival the numbers that Tom Brady and Randy Moss put in in 2007. In addition to Fitz, I look forward to great seasons from Michael Floyd (standout season for him) and Andre Roberts. What surprises me most about this season is that Palmer is the 19th quarterback drafted, on average, which puts him in the 12th round or later.

Runner-up: Jay Cutler (CHI) – Cutler is on a one-year contract, has an improved offensive line and a new coach who is focused on offense, unlike his last coach. Cutler is being selected ahead of Palmer as the 16th quarterback chosen with an ADP in the 10th round. I think Palmer has a higher ceiling this year, but both will deliver huge numbers for his ADP.

RB: Andre Brown (NYG) – I know he’s in a battle with David Wilson for the starting RB position and there is talk of one RB per committee, but I love where he’s being selected. It’s almost as if the audience is already giving Wilson the starting position. Even if that happens, at 6’227 pounds, Brown is the goal-line runner, as evidenced by his 8 TDs last year in just over half a season. With Tom Coughlin being an old school coach, I think Brown will be his favorite based on his blocking and ball handling skills as well as being a powerful backup. With him being selected in the eighth round, he is a perfect choice as their third or fourth RB.

Runner-up: DeAngelo Williams (CAR) – Williams closed 2012 with a 210-yard game and gets the starting role this year with Jonathan Stewart injured. If Williams can prove he can carry the load full time again, it will be a steal in a 10th round ADP.

WR: Golden Tate (SEA) – Tate is entering his third season, which is the classic breakout season for a WR. It also helps that Percy Harvin is out of season and Sidney Rice is injured, again. Tate had good chemistry with Russell Wilson last year, which steadily improved as the season progressed. He had 32 receptions, 493 yards and 4 TDs in the last 9 games. Tate has a golden opportunity to secure the No. 1 spot in WR, which is huge for a 12th round ADP … although I expect this to go up quickly towards the start of the season.

Runner-up: Emmanuel Sanders (PITT) – The Steelers paid to keep Sanders on the team after losing Mike Wallace to Miami. They plan to get their money’s worth. He’s an unknown playmaker, averaging 14.2 ypc last year and just over 5 yac. Big Ben likes playmakers and will be seen in the Sanders way often, even if Antonio Brown is considered to be the number 1 WR. With a twelfth round ADP, Sanders makes a great fourth WR with which can easily be counted to start each week.

YOUR: Brandon Myers (NYG) – The Giants lost Martellus Bennett (another Sleeper) to the Bears and replaced him with the underrated Myers. Myers had a staggering 79 receptions and 800 yards last year and joined the Giants as a free agent. Hey? Man, Oakland don’t know about talent. Eli likes his tight ends, in more ways than one, and will use Myers as much as possible and release his name this year. TE is a deep position, so Myers has an ADP in the 13th round.

Runner-up: Rob Housler (AZ) – The quarterback who threw all those passes to Myers is now Housler’s quarterback Carson Palmer. Housler is only being drafted in deep leagues, making him one of the true sleepers in fantasy football. He had 45 receptions last year on an anemic Cards offense. With Palmer at the helm, there is no reason not to expect a 50% increase in production from Housler.

D: Cincinnati Bengals: The Bengals have played solid defense in recent seasons, but they are always overlooked as they are in the same division as the Steelers and Ravens. Truth be told, the Bengals are better than those two teams this season. This group of strangers is extremely talented. Led by Geno Atkins and his 12.5 sacks last year, Michael Johnson and Carlos Dunlap are behind him in productivity. In the off-season, they added James Harrison to truly inspire this team. The writing of a defense always depends on your scoring system. Most leagues don’t award defense beyond fumbles, interceptions and sacks, which Cincy does well, but they don’t allow much separation in scoring between teams. If your league is set up to award points based on low yards and points allowed as well, you’ll want the Bengals to be your first D drafted. Seattle, San Fran, Houston, Chicago and Denver will be selected too high. You can get the Bengals in the 13th round with ease.

K: Phil Dawson – I’m always reluctant to put this position in an article on Sleepers, but I decided I would do it this year. The 49ers finally realized David Akers hit the wall and cut it in late 2012. He missed TOO many field goals last year. However, he had 94 attempts in the last 2 seasons to lead the league. Dawson isn’t a very interesting name, but he did 54 out of 60 FG during that time frame, including 27 out of 29 over 40+. With that precision and a similar number of attempts, Dawson could easily lead the league in points this year.

Florida Beaches and New Orleans Gumbo Combine to Create the Perfect Weekend Adventure

Anna Maria Island, located off the west coast of Florida, is one of the most unspoiled and attractive coastal areas in the US Winter is a wonderful season to visit this little-known area and the beautiful waters of the Gulf with its clean White beaches will satisfy any beach lover’s craving.

My wife Jan and I recently spent time in Anna Maria, a small town on the northern tip of the island. This picturesque island town is one of the last remnants of the old Florida experience. You won’t find towering condos or large apartment complexes housing hordes of people here. Instead, the city is populated primarily by residents who own houses with large lots, driveways, and respectable gardens. You won’t find tall buildings blocking the view of Tampa Bay sunrises or stunning sunsets over the Gulf of Mexico.

Except for a few large houses of a million dollars or more on the gulf side of the island, the houses are medium in size. Most of them are old Florida style residences that have been well maintained by proud owners. Although many of the houses are occupied by permanent residents, there are quite a few vacation homes that provide ample rental opportunities for the average American beach lover at a reasonable cost.

During our visit there in February, the weather was unusually cool. I am talking about 40 degrees F at night and sixty during the day. That meant we needed a light jacket to walk on the beach or ride a bike on the island roads. This was truly a perfect time for a winter beach experience. We love this trip so much that we try to do it at least once a year.

I’m always looking for a reason to cook my favorite food and the cool weather is just what I need to spark my creative imagination. Since I am a fan of gumbo and maintain a website for free gumbo recipes and cooking instructions, (see my link below) I reasoned that this time and place would be a great environment to create a Florida Beach Gumbo.

It’s no secret that the waters of the Florida Gulf are home to abundant marine life offering many fresh seafood options. Almost any city you visit in the coastal areas will have retail counters where consumers can purchase the fish of their choice. I wanted to make a seafood gumbo, so I consulted with my nephew Christian and together we decided on a gumbo recipe with shrimp, chicken, and smoked sausage. It was not by chance that I brought with me on this trip a link of my favorite andouille from New Orleans. My wife accused me of intentionally planning to make gumbo on the beach before we left home and I have to admit my fault.

On Saturday morning we had a plan and a recipe was written. All we had left was to buy the ingredients and prepare the gumbo. But first we had an art festival to attend. Across Sarasota Bay from Anna Maria Island is the sleepy fishing village of Cortez. This small town was settled in the 1880s by fishermen from North Carolina. Your area happens to be one of the largest seafood suppliers on the west coast of Florida.

The Cortez Art Festival is an annual event and the townspeople use the proceeds to fund preservation activities in town. Both professional and amateur artists will have pieces for sale and food vendors abound. The festivities include live music and dancing. The obstruction demonstrations were fascinating. I highly recommend this annual two-day event to anyone looking to have a good time or find a new piece of art for the home. My main motivation for being there was to buy fresh gulf shrimp from one of the two seafood retailers near the festival.

By mid-afternoon we had walked the entire show, made my shrimp shopping, and headed back to the island. I had gumbo cooking on my mind and couldn’t wait to get started. We first stopped at the local Publix to buy some additional ingredients. Part of my plan was to make a flavorful broth, as this step adds so much extra flavor to Louisiana’s most famous food.

I made the broth on Saturday afternoon and then refrigerated it overnight to cook the gumbo on Sunday. I always recommend a homemade broth, as it adds a lot of extra flavor that cannot be achieved with plain water. My plan was to make gumbo the next day.

Around 10:00 am on gumbo day I started cooking. I first chopped the onions, celery, and green pepper, covered, and set aside. Then I made the roux with oil and flour. I like dark roux so I took it to the color of milk chocolate. Because we had an island bike tour planned for the afternoon, I cooked my gumbo but didn’t add the shrimp. I planned to do that just before serving for dinner. Once the gumbo was finished, the pot was covered, the heat was turned off, we mounted our bikes and started pedaling.

Our first stop was Rotten Ralph’s, a bar and restaurant on the west side of Anna Maria, located in Galati Marina. The food is good and it has a good bar. There is usually live music at night and I recommend it to have a fun time. But be careful who you bring with you, as sometimes the type of songs that are played is not the accepted type on the Lawrence Welk show. We had a beer, talked and laughed, and then cycled to our next destination.

The Rod and Reel Pier on the northeast tip of the island was our next stop. It is a popular place to have a drink and eat simple food. It is situated in deep water and that attracts fishermen who pay a small fee to drown some shrimp from the wooden plank walkway.

Then we went to the bar and billiards at Bortell. The clientele here is made up of Harley bikers, smokers, drinkers, and pool players. This place has the potential to be the first establishment to receive a liquor license on the island and shows the kind of character that can only come from decades of use. But it was clean, safe, and the beer was good and cold. We drank our beer, played an extremely long game of pool (we’re pretty bad players), and then biked to our next stop.

Slim’s, a new place in town, was the last stop on our expedition. It’s a modern-looking bar with state-of-the-art pool tables and flat-screen TVs. The floors were spotless, polished brass gleamed in places, and the quality wood look was abundant. We drank cold beer in a clean glass, played a faster game of pool, laughed a lot, and then rode our bikes for our return to Gumbo headquarters and the steaming treat that awaited us. I am still puzzled how I lost 4 games of pool to my nephew Christian.

After catching my breath at the end of the bike hike, I heated the pot of gumbo until simmering, added the shrimp, and cooked 10 minutes. The Louisiana soup was served in bowls using a third cup of rice for a cup of gumbo and we all enjoyed it topped with chopped green onions.

My wife served a New Orleans-style City Salad that was delicious and perfect with gumbo. You will have to visit my website for the City Salad recipe. Sister-in-law Sue, who provided us with our lovely accommodations, made some whole wheat toast to round out the feast. White wine and margaritas were our drinks of choice.

Here is the recipe for my broth.

8 chicken thighs

2 whole onions, quartered

4 carrots, coarsely chopped

4 celery stalks, broken

3 garlic cloves, sliced

4 bay leaves

2 smoked ham hocks

1 teaspoon salt

1/2 teaspoon black pepper

1/4 of teaspoon of red pepper

3 quarts of water

Place everything in a large pot, bring to a boil, reduce heat and simmer for 2-3 hours. When ready, strain and reserve the broth. If making the gumbo the next day, cover and refrigerate. Bone the chicken legs and reserve for chicken salad later. Discard the rest.

Here’s my Florida Beach Gumbo recipe

2/3 cup corn oil

1 cup of flour

3 boneless chicken breast halves, cut into small pieces

2 cups sliced ​​andouille (any lean smoked sausage will work)

2 pounds fresh shrimp tails peeled and deveined

2 cups of chopped onion

1 cup of chopped celery

1 whole green bell pepper diced

3 garlic cloves

1 teaspoon Tony Chachere’s Original Creole Seasoning

3 bay leaves

2 1/2 quarts chicken broth

1 teaspoon of tabasco

1/2 cup green onions, chopped

Here are the cooking instructions.

In a large, heavy pot, combine the oil and flour and cook over high heat stirring constantly until the mixture is bubbly. Lower the heat to medium and continue cooking while stirring. You want to brown the flour to a milk chocolate color. This is the roux.

When the flour mixture turns the color of peanut butter, lower the heat and continue stirring. Don’t stop stirring. This is the key to making a roux. If you stop burning. If it burns, your gumbo is ruined. Keep stirring and simmering and in about 45 minutes your roux will reach that milk chocolate color.

Now add the onions, celery, bell pepper and garlic to this and sauté for 6-8 minutes. When the vegetables are soft add the broth, andouille, Tony seasoning, Tabasco and bay leaves. Stir and simmer for 1 hour.

Add the chicken and simmer for 1 hour. Finally, add the shrimp, stir and simmer for 10-15 minutes. Serve with rice and top with fresh chopped green onions. The correct serving ratio is 1/3 cup of rice to 1 cup of gumbo.
